A Garden You’ll Want to Devour
There’s a new resident in our Vineland Bistro, and it’s causing a delightful bit of confusion. Nestled in a proper terracotta pot, tucked in among the greenery, sits what appears to be a perfectly ordinary little garden. Look closer, though, and the illusion begins to unravel — the “soil” is a touch too glossy, the “moss” a shade too vivid, and there’s a spoon resting beside it that no houseplant has ever required.
This is our edible garden dessert: a playful trompe-l’oeil creation that hides a genuinely serious dessert beneath its botanical disguise. It’s the kind of thing that makes a table go quiet for a second, then erupt into “wait — is that a dessert?” We built it precisely for that moment.
What’s Really Growing In There
Beneath the disguise, this is a proper layered dessert — the sort of thing our pastry team quietly obsesses over long before it ever reaches your table. Each element is built to play a part, both in flavour and in the grand plant-shaped illusion.
The base is a pistachio dacquoise, nutty and just chewy enough to anchor everything above it. On top of that sits a bright, tart raspberry curd — the little jolt of acidity that keeps the whole thing from ever feeling heavy. And crowning it all, a cloud of white chocolate mousse, smooth and mellow, the sweet counterweight to the raspberry’s zing.
